Scientific Description

Anti-caking agents function either by coating particles or by absorbing the excess of moisture and making them water repellent. Some anticaking agents are soluble in water while others are soluble in alcohols or other organic solvents. A most common anticaking agent like calcium silicate (CaiO3) is added to table salt that absorbs both water and oil.
